Chorizo Hash

I've never cooked with chorizo, but it looked so wonderful in the grocery store that I could hardly help buying it. I immediately thought it belonged in a simple has with potatoes, cheddar cheese, and fried eggs. So tonight I went ahead with that.

Ingredients (made 1 serving)
1/2 an onion diced
2 shredded potatoes
1 link of chorizo sausage

I chopped the onion and cooked it until soft in some olive oil. I'd get it browned rather than just sweating it down, I think caramelized onions are much nicer. I shred two potatoes. I wouldn't buy the frozen pre-shredded ones, but you could. I used yukon golds that I already had. Add the potatoes to the onions and let that cook for a while. I let it cook for about 10 minutes before taking the sausage out of it's casing (you cannot eat chorizo casing in case you thought you'd slice it or something). I moved the potatoes to one side of the pan and cooked the chorizo in the other. The oil from the sausage helped the potatoes along and added flavor.
